I started a chore chart for my kids a while ago. If they do everything on their list they get a special treat on Sunday. This is their new favorite special treat, they have requested it four weeks in a row!
Glazed Peach Cobbler
Ingredients:
4 cups fruit - sliced (frozen, fresh, canned - whatever)
3/4 cup sugar
1/2 cup butter
1/8 tsp salt
1 cup flour (I have use a gluten free blend and it turns out great)
1 tsp baking powder
1/2 cup milk
1/2 cup sugar
1 Tbs. cornstarch
a pinch of salt
1/4 cup boiling water
Instructions:
*Arrange sliced fruit in baking dish sprayed with cooking spray. (I used individual sized pie dishes for my kids, so they can each have their own. They LOVE it!)
*Cream 3/4 cup sugar with 1/2 cup butter
*Add salt, flour, baking powder, and milk to make a batter
*Spread the batter over fruit
*In a separate bowl, mix 1/2 cup sugar, cornstarch & pinch of salt
*Sprinkle evenly over batter
*Pour 1/4 cup boiling water over ALL of sugar 0 be sure to cover every grain of sugar!
This is where the magic happens!
*Bake at 375 for 45 minutes. (I spread some foil out on the rack under my dishes to catch any spills)
When a toothpick inserted in the center of the cobbler comes out mostly clean it is fully cooked!
Serve with whipped cream, ice cream, or plain. Enjoy!!!
